Jambalaya Chimichanga is a Crazy Eight demolition derby racer. Her racing number is 27.
History
In Cars 3, Jambalaya competes in the Crazy Eight at the Thunder Hollow Speedway. At one point, she is seen driving alongside a disguised Lightning McQueen, but later gets hit by Dr. Damage, flipping into the air and then getting hit by APB, and is eliminated. She would later cheer on for McQueen while watching the TV with her friends.
